On a mission to learn how to cook every kind of meat, I bought a quartered rabbit from a co-worker who raises meat rabbits. It cost $15.00 ($1.25/lb). Apparently any poultry recipe will work for rabbit, which is good because Pinterest hardly has any rabbit recipes. I adapted an oven roasted chicken recipe, and made a meal out of it. 

Oven Roasted Rabbit

1 (3 to 3 and 1/2 pound) whole chicken rabbit
3 tablespoons McCormick Grill Mates Montreal Chicken Seasoning
1/4 teaspoon paprika
1 teaspoon parsley flakes
1/4 teaspoon pepper
2 tablespoons olive oil
Preheat oven to 450F. Clean rabbit then season inside and out with seasoning, paprika, parsley and pepper. Rub rabbit with olive oil. Place in roasting pan. Place pan in oven, uncovered and roast for 30 minutes, until skin is lightly browned. Reduce oven heat to 350F. Cook, covered for 30 minutes more. 

Stir in chicken broth (if you want, I didn’t) . Continue cooking, uncovered for another 1 to 1 and 1/2 hours. Remove from the oven.
